Bake: Maple and Pecan Biscuits

I'm starting to feel festive, but am also determined to hold on to that Autumnal feeling a little longer, so baked up a batch of Maple and Pecan biscuits. I adapted this recipe for Hazelnut and Maple biscuits by Nigel Slater for two reasons, 1 - I didn't have any hazelnuts and 2 - I bloody love pecans! 



The smell of the toasting pecans followed by the baking biscuits is very comforting. The biscuits are not very photogenic, so I've had a bit of fun creating an Autumn scene with them instead!



Ingredients
120g pecans 
50g Demerara sugar
250g plain flour
50ml maple syrup
225g butter


Method
1. Warm the pecans through in a dry frying pan until they smell toasted (you won't be able to see the difference). Blitz them in a food processor or mill until finely ground (although if you want more texture in your biscuits that is also fine, just do them for less time).

2. Put the butter and sugar in a food processor and whizz together, gradually adding the maple syrup.

3. Add the flour, nuts and a pinch of salt until it combines into a dough.

4. Roll out on a floured surface until you create a 3cm thick sausage.

5. Wrap in cling film and let it chill in the fridge for an hour. 

6. Take out of the fridge and cut into discs (I got 25 out of mine, Nigel made 16). Place on a baking tray and bake for 20 minutes at 200 degrees C.

7. They may look a little underdone but that is fine. Transfer to a wire rack to cool.
