Mincemeat and Marzipan Cake

I was so intent on making this loaf cake, that I went and bought myself a new loaf tin (my previous tin has completely disappeared). I like the thriftiness in that you are basically using up some Christmas ingredient leftovers. 

The recipe originates from a BBC Good Food book that I have on cakes and I was hoping that I could just post a link to the recipe on the website, but I can't locate it.

Ingredients
200g self raising flour
100g butter
85g sugar (light muscovado in the original recipe, but I only had caster)
85g marzipan in small cubes
2 medium eggs
300g mincemeat (I didn't weigh mine - I had roughly half a jar left (200g))
Flaked almonds 
2lb loaf tin lined with greaseproof or a tin liner

Oven on at 160C

Method
1. If using greaseproof paper, butter the sides of the tin and line the base.

2. Tip the flour into a bowl, add the butter and rub until fine. 

3. Add the sugar and marzipan and mix thoroughly.

4. In a separate bowl, whisk the two eggs and add in the mincemeat, Stir.

5. Add this wet mixture to the dry ingredients until completely combined. The mixture seemed quite dry to me.

6. Spoon into your tin and scatter on the flaked almonds. Pop in the oven for 1 hour.

7. Allow to cool in the tin before turning out.

It is delicious spread with butter, as in malt loaf, or eaten as a slice of cake. I think it would make a good alternative to a Christmas cake for those who don't like a heavy fruit cake.
