Eyeball Cupcakes

I have really been wanting to do a Halloween themed cupcake and was intending to do a cobweb cake. When I was a child, my Nan used to give me a Dairy Diary for Christmas {possibly something you bought from the milkman}, and I remember one of the recipes inside was a bakewell slice. The topping on it was where the chocolate icing was run through with a toothpick to give that wonderful pattern. Well, I thought that you could use the same effect for a cobweb pattern. {I hope this isn't too random}.

Anyway, before getting on with the cobweb cake, I came across this blog post by Sophie from Trinket Box, and you can see exactly how that post translates into the eyeball cupcakes that I have made here!
They are a little rough around the edges, but then I did have a little help from someone on an inset day {below}!

So, for the recipe:
Ingredients
  • 100g of butter
  • 100g of caster sugar
  • 2 medium eggs
  • 100g of self raising flour
  • 1 dessert spoon of cocoa powder
  • Chocolate butter icing (ready made (Betty Crocker) or see edge of packet)
  • One pack of Oreos
  • Smarties or Minstrels or Galaxy Counters
Method
  1. Using an electric hand whisk, cream the butter until pale and fluffy.
  2. Add the sugar and whisk again.
  3. Crack an egg into the bowl and whisk thoroughly before adding the second egg.
  4. Sift in the flour a little at a time, folding into the mixture with a metal spoon. Sift the cocoa powder and fold in too. You want an even tone to the mixture.
  5. Fill a cupcake tray with paper cases.
  6. Pour or spoon in equal amounts of the mixture and cook in a preheated oven at 180C for 15-20 minutes.
  7. Once cooked, move to a cooling rack to cool!
  8. When cooled, mix up your butter icing, if making yourself, and cover the top of the cake.
  9. Using a knife, carefully prise open each Oreo. You only want the ones with the cream - you can eat the other half!
  10. Place on the butter icing.
  11. Dip your smartie in a little icing and place in the center of the oreo. 
Note: These are best eaten on the same day because as soon as you store the cakes the oreo is going to start to soften.

  2. They look great! I'd completely forgotten about cobweb cakes you know. We never really do a great deal for Halloween, but maybe we should at least make some spooky cakes!
